SafAle S-04 ® (4 grams) is a favorite dry yeast to use in the production of all types of beers from the British isles. It is highly flocculant, and as such produces beers of unequal clarity. Flavors are slightly fruity, with an earthy English character, as are aromas. This yeast is especially used in making English style pale ales and bitters, and is similar to some yeast strains used in American breweries when producing heavily-hopped beers. However, it has a wide range of applications, and can be used in almost any British beer. Recommended when a true “English” character and very clear beers are desired.
