A suitable yeast for English style ales


Safale™ S-04 by Fermentis is a favourite dry yeast to use in the production of all types of beers from the British isles. It is highly flocculant, and as such produces beers of unequal clarity. Flavors are slightly fruity, with an earthy English character, as are aromas. This yeast is especially used in making English style pale ales and bitters, and is similar to some yeast strains used in American breweries when producing heavily-hopped beers.

SafAle™ S-04 (5.5 grams) Homebrewers love this commercial English Ale yeast for its big, clean flavour; its rapid fermentation; and its highly flocculant character.

Widely recommended for practically any American or English style beer, Safale™ S-04 yeast a rapid starter and finisher which settles out extremely well, leading to a clean finished beer. Great to keep a few packets as back-ups or just to use as a less-expensive alternative to liquid cultures.

Pitch the yeast directly in the fermentation vessel on the surface of the wort at or above the fermentation temperature.
Progressively sprinkle the dry yeast into the wort ensuring the yeast covers all the surface of wort available to avoid clumps. Ideally, the yeast will be added during the first part of the filling of the vessel; in which case hydration can be done at wort temperature higher than fermentation temperature, the fermenter being then filled with wort at lower temperature to bring the entire wort temperature at fermentation temperature.


Alternatively, sprinkle the yeast in minimum 10 times its weight of sterile water or boiled and hopped wort at 25 to 29°C. Leave to rest 15 to 30 minutes, gently stir and pitch the resultant cream into the fermentation vessel.
